Polish CAN DO additional cleanup/actions . There are settings for Polish. They appear when you launch it (and you can set the default there).
Embed, just replaces the metadata

In fairness, for right now Dropbox for desktop is more like an automatic sync solution rather than pure cloud storage. If the internet goes down, you just lose the syncing ability (and run the risk of version conflicts if editing files on multiple computers) but you still have all your files stored locally.
