? Stupid question re: original files and sending to device

OK, I tried searching for this in the calibre manual and mobileread, but the search terms either show no results or are too generic.

I have several formats of books as I have changed devices over the years in my calibre library. I have changed back to an epub device and was wondering when I choose to send specific format to device (epub), how does calibre know to send the latest converted epub vs the "original epub" that is now saved during conversions?

I assume that this is the default behaviour, but I could not find any documentation on this and wanted to make sure that uploading my whole library to the new device uses the new epub conversions with fine tuned modifications of css (for the new device).

The original epub is never sent to any device since the extension is .original_epub and not recognized by any device.
