I relate to this post topic because I just started doing something similar after collecting e-books for about 15 years. My library is a nightmare.

I’ve seen a few mentions of “Polish”, but I’m not sure what it refers to. Is it a plug-in? I have not been able to find it.

Polish is a calibre builtin plugin. From calibre's Preferences, you can edit a toolbar to make it visible. My personal preference for most purpose is the Modify Epub plugir. Polish handles more formats but my library format is ePub.
