Continuous scroll on Epub vs PDF
Continuous scroll on Epub goes to the end of the chapter, and then I have to turn the page to continue. Whereas, for PDF, it goes on and on (similar to what I'm used to from the Kindle app). Why the difference? Or am I missing something in the settings?

No, you are not missing anything, PDF is completely different to EPUB in the background.
