Is it possible to do, I'm running 5.15.1 currently but I turned of the wifi so it can't update

No. Keep in mind the only way this happens is someone locates a vulnerability in the firmware that can be used to allow a JB to be done. Your best bet is to keep the unit in Airplane mode and side load all content to keep from an unwanted firmware update.
