Capture email/share date in column?
Some times I forget which books I've sent to my Kindle. I'm wondering if it's possible to have a column that updates when I send the book with either the date I emailed the book or maybe just a boolean yes/no if I've sent it?

Not automatically no. You could of course manually update sucha column everytime you email. calibre itself stores no records of sent emails.
