Changing the viewport on these files

I ran across a tutee for doing fixed layout EPubs. I downloaded, opened in iPad and see that the dimensions are smaller than I need. I need the book to display in landscape only the exact size of the iPad2 screen 1024 x 768. I tried to change the viewport dimensions and the body dimensions in the css and I still get the same size. I also looked at Liz Castro's book on how to do ( but hers is from scratch.

The Epub is edited down to two pages, can someone let me know where I have to edit the size so this would display at the size I need?
