thanks for that ! looks delicious ! maybe you can post it in the recipe thread, also ? just a question though : what is in the "French's Chili-O Original seasoning mix" ? it might say "French" but i've never seen that over here...

French's is a brand name here in the United States. My wife says that you can substitute another dry chili mix for it. I named those brands because that's what she uses.

Thanking God that school isn't in session on Saturdays and Sundays.

My first full week of volunteering in my grandaughters 1st grade classroom......I haven't been back since August 30 according to the sign in book.........

When teacher in her class doesn't need anything, I go to daughters classroom (she teaches 3rd grade there) and see what she needs. Between the two, I'm busy from 8-4.

Even if its just sitting with a troublesome student, or helping one with math they don't understand, or what a complete sentence is and why you can't start a sentence with the word "And", or listening to someone read.......I"m an extra pair of hands and eyes.

I love every second......but I come home exhausted, my legs are killing me (remember I'm OLD) and guess who has dinner ready? If not ready, there is something out that is easy to cook and eat.....

Volunteering: an addictive form of getting high.

I don't actually have a recipe and use what I have on hand but that's pretty close. However I don't use oil or sugar, not on my diet.

Last night I used

1/2 Sweet Onion sliced into about 1/2 size rings... or you can dice it.
5 cubed sweet peppers (these are mini size I had)
2 cubed roma tomatos (I used caned if I have them and then use less tomato sauce)
2 cups or so of sliced mushrooms
2 cans of kidney beans
2 cans of tomato sauce
Garlic Powder
Cyan Pepper

I heat up a skillet (med-highish) and coat it with spray on non-stick spray rather than oil.

Then I sauté the Onions and Peppers and lightly coat them with garlic powder... if I had fresh garlic I would crush about two cloves and use that instead. Once the onions and peppers start to get soft... turn off the heat and pour a can of tomato sauce in... this will deglaze the pan a bit... then I put it back on the heat and put the rest of the stuff in. Add Cyan pepper to taste. You might want to go light on this, you can always add it to the plate later... but you do want some of the flavor to soak into the beans and mushrooms.

Bring it to a simmer (then lower heat) covered for about an hour or so.... until the mushrooms are soft. If it is too watery for you you can take the lid for a while while it is simmering and it will thicken a bit.

thanks ! that looks delicious too ! please post it in the recipe thread as well ! (ga, suddenly i'm STARVING but i can't eat anything because i'm invited to dinner at a friend's house. i may not make it that long. )

just a tip, you can buy fresh garlic, chop it up, then freeze it. then you always have some on hand. you can do this with fresh ginger too. i take the lazy / easy way and buy it pre-chopped and pre-frozen but sometimes i make my own too.
