			5 pounds of thinly sliced onions slowly caramelized in 1/3 cup butter, add 1 500ml can of Guinness (or other dark beer) and 6 cups beef (or veggie) stock. Pepper, thyme and oregano, if you feel like it, but it's not necessary. Let simmer an hour minimum, without a lid.
