You would think that buying a book on your wishlist would remove it from the wishlist
But instead the Kobo app cheerfully continues to show me several books on my wishlist already in my library, and only when I click the wishlist entry does it show me a "Read Now" option.

Surely this isn't a difficult feature to implement?

I think this is a recent bug on the app, as I have noticed this in recent weeks myself , whereas before that a purchased book did disappear from my wishlist as expected. And it behaves as expected on the Kobo website.
