Dates in a taglike column
I have a column that stores dates.

Is any possible way to have it display as "January 1 2000, December 31 2010" but still sort in order of date?

There is a tweak for real date types (not a text that looks like a date)

The Format of a Date column does not determine how it is sorted - to get what you want enter "MMMM d yyyy" into the Format field:

But that wont put the column into the Tag browser.

This is why we used ISO date format for early DB text fields:
20011204 (YYYYMMDD) They ASCII sort
Why not use a saved search? Or is your desire down to a day?
eg (mine is a date column, But any search should work AND the search name IS sorted in the list

What happens of you store the data as a Date, and cloak it with a tag-like composite column viz:
