Firmware Update Paperwhite 11th Gen. What firmware?

I have a Paperwhite 11th Gen that I bought years ago that has never been online (wifi always been off), on firmware 5.14.2. I have used it mainly for copying text books to it in epub or pdf using Calibre.

I'm not sure if 5.14.x is the best firmware to keep it on, but if there's a better version (performance maybe?) that I should update to, then I'll do that. I would like to preserve any jailbreaks I suppose just in case I'd like to do that at some point in the future.

Is there a specific "best" firmware for this device? Also, can I update to a firmware that isn't the latest, or does Amazon force the latest only?

You can manually download a firmware update and sideload it to your PaperWhite. You will either need to always keep your PW offline or jailbreak it and use BlockOTA tool to prevent it from updating while online.
