OK, now I understand why here in Italy when a pizza is very bad we call it "good for Americans"!!!!!!!!!

Just an historical note.
The real Naples' pizza, the one I like most, once had no cheese on it. Just a very thin crust, a good tomato sauce with basil, extra-virgin olive oil, and anchovies (capers permitted, not mandatory).

When, in the late 1800s, the Queen was visiting Naples she demanded for pizza. But, given she hated anchovies, the famous pizzaiolo Brandi created a new kind of pizza.
He put buffalo's mozzarella, oregano, and gave it the Queen's name: Margherita.

Since then, when you ask for a pizza without specification, that's what you get.




Another historical note:
Yesterday I made a pizza for my girlfriend, and i put grilled aubergines and courgettes on it (with a bit of mozzarella, fresh tomato sauce, and oregano).
It was very good, despite I have an electric oven, instead of a wooden stove...

For everyone suggesting a Chicago meet-up around Xmas I will make a note to start a thread when it gets close.

There is the original Gino's downtown and two in the suburbs (one close to my house in Schaumburg). I imagine it would be easier for people to travel downtown rather than travel to the burbs.

Just to make Chicagoans and ex-Chicagoans salivate more and to give others information about some Chicago favorites foods see the links below for Chicago-Style Hot Dog and Italian Beef. The best Italian Beef can be found at Portillo's.

I've always wondered why they named a pizza after my favorite cocktail!! Thanks for the fun facts! Oh, and don't knock Chicago deep dish until you've tried it!! You might just be converted!!

Grooks, that was low! Now, not only do I miss Gino's East, now I miss Portillo's, too! I have never been able to find a good Italian Beef sandwich outside of the Chicago area and Portillo's was one of the best sources! . . . sulks off to eat some bland PB&J for lunch.

We have only spent a few days in Naples, but we made certain to eat all of the pizza and gelato we could wrap our tongues around. I liked the Neapolitan pizza MUCH better than Rome's version. Also, at the smaller family pizza cafes, the mozzerella was cubed instead of shredded, which melted down into chewy gobs that still had enough texture that you had to bite into it. And don't even get me started on the gelato!

Because my dad was the head football coach at my high school, my mom used to have a homecoming party every year. She always served Italian beef with the best hoagie rolls. I had completely forgotten about that until you mentioned the aluminum pan. I definitely need to get my mom's recipe. Thanks, Dixie!
