a lot of books have ASIN=UUID, maybe, needs to be removed if not 10 symbols

Read ebook-meta --help it tells you exactly how to remove identifiers and when removing is not allowed.

I did ))
To remove
an identifier, specify no value, --identifier isbn:
Note that for EPUB files, an identifier marked as the
package identifier cannot be removed.

but my file is AZW not EPUB, cannot remove these UUIDs

ebook-meta file --identifier mobi-asin:
seems to be correct (?)

That's likely specific to the kind formats. They dont support generic identifiers only a single asin and ebook-meta cant update that, as it is designed to work with generic identifiers. It will work fine in an EPUB or PDF or KEPUB file.

With calibre, you should never convert o Mobi unless you have a K1, K2, or KDX/KDXG.
How to explain this?
Mobi is smaller
Converted from Calibre GUI not command

Hello
One more question
"Welcome wizard: Change default output format to AZW3 for Kindle as MOBI is obsolete and all Kindles released within the last decade plus support AZW3"

deleted all the preferences, run Welcome Wizard again - default format is still mobi
No Kindle at all, just generic device

A very good way is copy ASIN from amazon store manually, then download data and cover
but it is not automatic ((
even if I check prefer kindle edition - the program selects audiobook by default (or the first in the list) not kindle

Because that Mobi lost many of the formatting that EPUB and AZW3 have.
(old) Mobi was HTML3 based. It had no CSS, All sorts of tricks needed to be done, even to do text positioning. It was a step above Plain Text.

I haven't run the Welcome Wizard in the last ten years and have changed / added devices many times. I use Preferences: Behavior. and Preferences Sending..to Devices Although, that only applies before you first connect a device. From then on, Connect the devise: On the device icon: Configure. (Calibre stores YOUR settings for each device type you use)

Who MAKES a Kindle?
