I've been using a Unicomp (IBM Series M type) for a few years and I found that I make fewer errors with it. Now, to ensure that we stay on topic, it works fine with Linux.-)

I won't go too off topic too, I hope; but pricewise, honestly, I would care that the (doubled since) price and the build quality of a new Unicomp won't get me over a well mainained original IBM (well its price might be around 70$, if finding in neighbourhood' second hand's market - ebay's there often tries to increase it).
As for the conversion, from the 5 DIN pin, Soarer's converter would just work with gnu/linux, imho (https://sharktastica.co.uk/guides/soarers_1)

Sorry again, if this was too off-topic.

Also it could be nice not having a Windows keycap lol .

If you do go the unicomp route, the winkey can be ordered as other stuff. They have an option for the Linux keycap set, so you can have Tux instead of the Windows Logo.
