See that's subjective, though. Billions of people have managed to make bread just fine without weighing flour (flour that has differing amounts of gluten). Weighing is objectively better for bulk amounts (with reproduceable results), but volume will work just fine for the baker just wanting to make a loaf of bread every now and again. No blood will be spilt.

I'm not poo-pooing recipes with weights (or billions with 12 zeros) I'm just saying that expecting people to use (or not use) terminology that goes against everything they've ever learned in school is a bit pointless. Embrace the differences and translate accordingly when encountering them. *shrug*

Because you need some sort of standard to determine what a "billionaire" is, as far as wealth is concerned. If you don't set a standard, then many people in Venezuela could claim to be "billionaires", as they have that many bolivars.

Also, like it or not, the US dollar is pretty much the de facto standard for currency in the world. If you were buying drugs in southeast Asia to transport to Europe and sell, you still used US dollars.

I would have to say that you do not do much baking. Cooking is an art where precise measurements are not needed. Baking is closer to a science and measurement matters. A baking recipe where the dry ingredients are given by weight and the liquid measurements given by volume has a much better chance of being reproducible.

Looking at your comment about adding more flour to get the right consistency, I would have to ask how much experience it took to know what that "desired consistency" was.

My mother taught me to put however much rice I wanted in a pan and cover it with water so that the water came up to the top of my fingernail above the rice, cover the pan with a cloth, and boil until no water left. One had about 15 mins before the pan needed looking at.
