What version should i keep my kindle?

Hey so i just bought a kindle and was wondering what version should i keep it on?

Mine came with version 5.14.3.0.1 and I know that there's currently no jailbreak for anything over 5.14.2 so should i just keep it in airplane mode while I wait for any possible future jailbreaks or should I just let it update?

If you intend to jailbreak it always makes sense to stay on the lowest possible firmware. Nobody knows when (or even if) a jailbreak for 5.14.3+ will come, so it's really up to you to check the release notes of new firmware versions and decide whether the new features or bug fixes are worth more to you today than a possible (but not guaranteed) jailbreak in the future.

There are many different reasons people want to Jailbreak the Kindle, most are, IMO, silly, like wanting to watch YouTube on it... Namely the new Home screen.
But that wouldn't be so bad since you can just switch to Library right?
Except they took away the ability to have Collections keep things off of the main Library page.
When you have kids books that you don't want clogging the screen or adult books you don't want to be visible or you read a lot of books & want to keep a few easier to find or you reread a couple books & want them to be visible without having to turn off the "Hide Read Books" option to un-mark-as-read them you used to be able to put them in a Collection & that Collection would be at the top of the library & you could choose to not have those things in the collection show in the library otherwise if you wished. & they would always stay at the top of the library.
Now being able to set it to stay at the top or not would have been nice, but the new ones don't have that option, Even if you read a book in the collection it doesn't bring it back to the top, it just exists where it's "Last Read" state is the day it was created & the items in them are all on the regular library too & if they are Read they disappear from the collection too.
So if you want to do ANY of things people like to do with Collections... You can't... That is enough of a reason to Jailbreak.
IMO, it's enough to make me consider doing the Jailbreak that requires you to open the device & jumper pins but, as of yet, not enough for me to actually do it.

Why not buy something else then? There are a lot of eink readers out there these days, it's not just 1-2 brands.

I mean I had no intention of Jailbreaking my Paperwhite 3 but I easily could have when I bought it. Amazon made it less usable. The only way I can get it back to the way that was nice is to jailbreak it. Until that happened I was happy with my non-jailbroken Kindle.

Nook needs to be jailbroken too, & it is just worse all around. So it's really Kindle & Kobo...

If we want to get technical There's BOOX & PocketBook but Those are rare, more expensive, less supported, & not exactly eBooks as they generally are more eInk tablets. PocketBook runs Linux, so you can do a lot with it, but it also doesn't look to be as user friendly. BOOX you have to jailbreak as well

A major thing there is price...
You can get a Kindle for a lot cheaper than an equally speced Kobo. & it's easy to find a refurbished or used Kindle, not so with anything else

But also we like the Kindle, In my case at least, but we should have the right to not have them take away the things that they gave us, we used, we liked, then they took away. It's like Twitter now that Musk own it, it didn't add features, it just took away a bunch of stuff you could already do & made it so you have to pay if you want to do it. That's a service, so there's not much we can do about it, but this is something we bought. I liked how it worked when I bought it, then, years later, they took away some of it & shoved more ads in my face even though I paid extra for the ad-free version.

Not true. You don't have to jailbreak (the correct term is root here) a Boox at all, as you can install any old Android app on it even without rooting. And Pocketbooks are not eink tablets by any means. They're an ereader brand, just like Kindle/Nook/Kobo, and no less user friendly than those.

Both Kindles and Kobos run Linux as well, just like Pocketbooks.

Unfortunately, where I live, the only e-reader sold is the Kindle. Importing another e-reader from another country is out of the question because of excessive taxes. Fortunately, I bought a Kindle before the release of the firmware that fixes the jailbreak.
