Depends. A few years ago I had a copy of my calibre library on a flash drive which I occasionally took with me when I left home. If I had lost it, someone could have found it and uploaded the books to a pirate site, with (possibly) my information in them. Back then I too was interested in removing personal information from my books. But in the end I never bothered, and ditched the flash drive altogether.

Some quick rules for keeping your data and computers secure.
  1. Control access to computer equipment. If you don't have physical security, you don't have any security. Encrypt your hard drives.
  2. Use effective passwords and change them REGULARLY! If you are using the same password in more than one place, shame on you!
  3. Secure wireless networks. Use WPA2 or WPA3 instead of WEP or open.
  4. Don't open emails or attachments from unknown sources and be dubious of those from known sources.
  5. Install, maintain and apply antivirus/antimalware programs.
  6. Install and use a firewall. Under Windows, do not click on Allow for inbound connections.
  7. Never install unnecessary programs.
  8. Create backups and then verify them. Make sure at least one of your backups is off-site or in the cloud.
  9. Stay current with software updates. Nothing like still having a exploit accessible a year after it was patched.
  10. Avoid using the same computer for home and business use.

If you're using Calibre server open to the internet, put a password on it. Will keep people from swiping files from those.

I have that worry too. I circumvented it by using a program called Veracrypt.
With Veracrypt you can make a large file into a virtual harddrive. On this virtual harddrive I have all my ebooks and other stuff that I consider private. When you start your computer you will have to mount the virtual drive and specify a password. The login method can be made quite secure.
A thief will not be able to access your secret stuff.

There is an option in DeDRM settings. Disabled by default. It may not remove everything.

The current DeDRM removes the watermark from Kindle eBooks.

But if the computer is stolen and there are no tools on it to remove the DRM, then there may be a good chance that the thief won't be able to remove the DRM. So if you are afraid, but only eBooks with DRM and have no tools for removing the DRM.
