You folks are nuts with your sauces. All you need to do is drop it on the ground, whatever it is. Roll it (but just once) so you get a little dirt on it and it'll be YUMMO!

One of my daughters is spending a semester in Rome right now but spent a week of it in Tunisia. I pretty much had to look it up in the atlas to be sure where it was. And when she sent photos, it looked wonderful and like no place I have ever been. Ahhh, to travel to interesting places.

Two ideas more :

Once the mayonnaise begins to "appear" (solidify???), you can add as much oil as you need; you can produce litterally liters of mayonnaise at one time
you want to experiment with ingredients : sunflower or olive oil; add some fine herbs; try with curry...

When I was young :scrounge-scrounge: we did it by hand, just "beating" it with a fork (you make a circular gesture that constantly hits the bowl, that's why it's called "battre la mayonnaise") -- doing it all your life will give you a nice tennis elbow too
