calibre will work fine. If clicking on the calibre icon in finder/dock does not work it will be because the Launch Services cache on your machine is screwed up, resetting it will fix that.
I put in "rm -rf /Applications/calibre" and it did nothing.

Another possibility is what type of user are you configured as? A standard user attempting to delete calibre.app should get a mass of Permission denied error messages before the delete fails. Can you see calibre.app in your Applications folder? Can you open your hard drive and type calibre in the search box and post what results show up? See attached image for what I mean. If you see calibre.app (one or more occurences), try moving them to the trash and then emptying the trash.

So I will return to 5.1.0 that is working.

My question is : What change in calibre between 5.1.0 and 5.2.0 that can cause crash ?

Sorry for my bad english.

@Mac Taylor: You have a bunch of broken third party plugins. Run calibre as

/Applications/calibre.app/Contents/MacOS/calibre --ignore-plugins

and it will start up fine, then go to preferences->plugins and disable/uninstall the third party plugins. And then you should be able to start calibre normally.

Hello,

After a little bit of looking into plugins, in 5.1.0, I found one that was not updated for long. Sorry did not think of taking the name. I uninstalled it. Quit 5.1.0, start 5.4.2 and it is working. Thank you very much to showing me the way. I did not think of plugins as a problem. Now I know.

I'm using calibre 5.4.2 on mac 10.15.7. When I open an ebook file on finder, the ebook-viewer icon will pop up on the dock but the app itself doesn't show. If I click that icon, the viewer app will show as usual.
