Slow and steady. You've had a rough 13 days, and the last thing you want is a relapse. The good news is that you have the underlying conditioning that you've built up over time. A glass of Fresh Squeezed Orange Juice (FSOJ), and a mug of Peet's Major Dickason's.

A busy day today. I've got two slabs of bacon going into the cure, and 2.5 kg of Hot Italian Sausage that needs to get ground and stuffed into casings today, plus I just made a 1 kg. batch of hot breakfast sausage (Jimmy Dean style).

I'm trying some Alwazah Ceylon green tea. It's both grassier and sweeter than I expected, almost like fresh corn stalk (I grew up in a rural enough area that I know what that tastes like

). It's quite good.

Cranberry juice, and about to be Murchie's Balmoral Blend tea. A lovely tea, really. And a good way to start the day.
