Huh? That must be a different tripe. Every time I have smelled honeycomb tripe which looks nothing like that wiki picture it smelled so awful you wouldn't want to eat it.
Most stores won't sell honeycomb tripe.

There's definitely tripe in Texas. Tripitas are made from intestines, but menudo is made from stomach tripe (usually reticulum tripe aka honeycomb tripe).

I own a fire tablet and two Kindle Keyboards. One of the KK is a backup. It doesn't charge well, I have to open the case to get it to charge. I like that audio is coming back to the Kindle, but the Oasis is too expensive for me. If they get audio on an a lighted e-ink device around the price point of the Paperwhite, I'll buy it.

All I know is the menudo made in west Texas is made from intestines.

People here don't use the honeycomb tripe.
It is not sold in the stores.
I don't give a crap about what wiki says. They don't know all.
Now here is the thing. Texas is HUGE. There are several different types of Mexican food and menudo.
So are you saying you have eaten menudo at every Mexican restaurant & food truck and church in Texas?


There is not one recipe for menudo.
That would be like saying all chicken soup must be chicken breasts only.

I didn't say you were a liar, all I said that there is definitely tripe in Texas. La Posada in Austin makes an awesome menudo, with honeycomb tripe.

It's certainly possible that other places make a menudo-like dish from intestines.

Since this thread started I think I've added about eight eReaders to my collection. It's a sickness. Dang Shop Goodwill. Go away ... go away. (Mostly Sonys, BTW, but there was probably a Kindle Keyboard or two since then and a Kobo Touch.)

Perhaps they are not handling it properly. The raw tripe should partially cooked and bleached prior to retail sale.

See the recipe here for an example of the type of tripe I'm writing about. To me, the rough surface looks very much like a honeycomb.

I know some people don't like tripe. But then some people love nattō sushi. One friend without the excuse of Scottish ancestry loves haggis. À chacun son goût.

Hmmm... I've seen menudo recipes with tripe, pork and pork liver (Filipino), intestines (small), hearts, brains, spleen... hmmm... is there pattern here? If even the nose to tail crew won't serve eat it, you can use it in a menudo?

I guess San Antonio doesn't qualify as west Texas since one recipe I have is credited to a hispanic family from San Antonio uses honeycomb tripe. Though why you worry about directions in such a tiny area is beyond me. 1,327,920 square miles for where I was born (that's the territory, not the country) compared to a measly 268,820 square miles for Texas. The population there has boomed to ~77,000 as of the 2016 census.
