A common complaint that I see in cookbook reviews at Amazon is that the ingredients are so specialized and unusual that they can't find them in stores around where they live. That may be a downside to this book.

Are you referring to that wonderful fabulous milk candy? That I do not keep in the house for fear of becoming as big as a house.
If so, we are as sophisticated as you are.
Dulce de leche in recipes is nothing more than caramelized Eagle Brand Milk.
I specified because some of the other brands skimp on the sugar and the condensing.

I agree there are many cookbooks with specialized ingredients.

Though one magazine totally irked me one day.
A recipe called for Persian Pickles and some very hard to get fish.
The magazine was not Bon Appétit or a similar one.
The magazine was Real Simple.

My mother is a great cook, but she cannot make that kind of caramel icing as well as the woman who gave me the recipe. haaha

Well, I kind of doubt it. The free edition has been out a while and her kickstarter campaign sold hundreds of thousands (and the pdf was free then, I remember the campaign).

I read the galley for review when the 2nd edition came out. 199 pages in that galley, there are 89 in the free download, but that is a 2-page per counted page format (not nice for conversions to epub or mobi, tho, and not as easy to read on a tablet, either). I liked the formatting on the 2nd edition better, it was easier to read, I thought. But I'm not sure it is "bigger" by much (there has been some editing here in there, optional ingredients are listed in the ingredient list more often, for example).

But whatever you do, don't eat one of the dishes from this recipe before you engage in any sports activity, marathon race, etc. It is very important that you be hydrated as much as possible before engaging in activities such as that!. haha
