Checking In:

I didn't buy any books last week. I'm still reading The Baby and The Bodyguard but only a little here and there. Too busy watching Christmas movies. Saw a couple new ones. Christmas Mail on Hallmark and Rented for 99 cents for on Amazon An Evergreen Christmas. Both were pretty good.

I did buy a Nokia Lumia 520 for $20 on Amazon. I have no clue yet what I am going to do with it.

I love the new interface on Moon+ It's pretty clean and actually looks decent now and he moved the progress bar to the bottom so no more accidentally losing my place in my book when I hit back to home. Oh and It's 50% off right now for the Pro.

So y'all can have a laugh after me making fun of hubby's attempt at cookies. Tonight I made mine well I accidentally put 1/2 cup less of flour in the dough. So instead of 2 1/2 cups it was just 2 cups. I have not try to bake them yet but I did use real sugar! I don't think I will be able to roll these out. I just bought a new rolling pin too. So I guess I have to make another batch after I see if these are okay or throw away.

So this is what I am baking and hope I don't screw up anymore. Sugar Cookies, Peanut Butter Cookies, Peanut Butter Fudge, Rice Krispies Squares. I'm wracking my brain what else I could bake that doesn't require chocolate. No Oatmeal cookies as hubby doesn't like them but I am short on ideas.

Carrot cake? Or maybe that's too much work/too unseasonal.

Maybe those kinds of cookies with the little jam dots decorating the centre top? (Or if you're feeling adventurous, this recipe for classic Canadian Butter Tarts doesn't look like* it would have anything you probably don't already have at home if you've already got baking supplies in.)

As for the not-enough-flour batch, maybe you could turn them into drop cookies if you can't roll them out? Unless the texture's totally wrong for that.

* Disclaimer: I'm a lousy, lazy cook who very, very rarely attempts baking, so you're probably much better off not listening to any kitchen advice I have to give that doesn't involve nuking stuff until it's done.

I prefer nuking 95% due to laziness but I do love to bake sweets. Most of the time it's a box mix but this is the first time in seven years I have had a oven that works correctly. My old oven cooked everything uneven and at the wrong temperature and the door didn't shut all the way. This one seems to work beautifully and is digital so I am cooking from scratch but out of practice a bit but I did find my 15 year old B&D hand mixer. It still shoots sparks at me sometimes but works!

I'm not sure hubby would eat those tarts. He's a bit picky. The Jam thumb prints might be an option.

Lemon Shortbread Squares? (look easy enough, apparently you can freeze them until someone shows up who'll eat them if your husband doesn't) Coconut Macaroons? (only 5 ingredients, but may require shopping)

Anyway, I just posted a dessert baking freebie and maybe it'll give you some better ideas.

Thank I've give it a look. No Freezer space but It's not like anyone would show up here to eat them. I just threw out 3 big bags of Halloween candy because we knew no one that would eat them.

Hubby just gave two thumbs up to the Jam Thumbprint cookies so I will pick up some Jam and more flour and eggs tomorrow when I go shopping for the Girl's Xmas gifts.

I've got a big roll of sugar cookie dough in the fridge. It was on sale with a coupon. I am not too good at getting rolled, cut out shapes onto a pan, though. I'll probably just ball them up and flatten them.

I just watch an Alton Brown video. He shows a neat trick for getting the cookie shaped and into the pan without it falling apart.

So I cooked my dough and it was too sticky to rolled out although I tried. It turn out to be super cakey and puffy. So I rolled them in powder sugar. I don't know if less flour caused it or what.

Thanks for this one, it looks easy and I love lemon squares! So far I've made Orange-Carrot Cookies, Pinwheels and Sugar Cookies.

A little cookies update. Hubby came home and ate a dozen. So I think you can say the powder sugar was a hit. I made Peanut Butter Fudge tonight. New Recipe as I couldn't find my old one but this one was so much easier. It cooling now so don't know how it taste but it sure smelled and looked good!

Molasses Cookies, Snickerdoodle cookies, ginger snaps, instead of chocolate chip cookies substitute peanut butter chips, toffee chips, white chocolate chips or just leave them out it will be similar to a sugar cookies. But you can add raisins, dried cranberries, nuts, coconut. Next time you do not add enough flour kneed in the rest similar to kneeling bread. It will take a little longer but it will work or shape into a long roll, wrap in wax paper and place in freezer until hard then slice while hard/frozen and bake. Sprinkle with granulated or powder sugar

Thanks. I plan to do more sugar cookies today. I think I will get hubby's help in rolling as my back is sore today. The girls knows it's Christmas Eve and kept waking me up since 4. Don't ask how they know they just know. My cats are like little kids so excited.

I remembered I have a bunch of wilton cookie and cake tins in different shapes. Of course I've never used them. I brought them all up from the basement today and will use them for cakes, brownies, and cookies!
