Thai beef is un-chewable. Even ground up it's still tough. But they really, REALLY do pork well. So at the morning street market I bought about 2 kilo of really fresh, meaty ribs, (probably 2-3 hours after it was on the hoof,) and we made BBQ ribs and baked potato for dinner. Damn, it was good...

Yes, and no. Did you see the meat that the butcher was handling in the video I posted? (2:27 minutes) Meats that are prepared by Halal and Kosher laws must be consumed soon after slaughter. The sooner the better. Obviously, the longer meat and poultry is aged, the more tender it will become, as the muscle fibers actually break down. But rigor mortise is nothing more than muscle contraction rather than actual hardening of the fibers. The meat feels more firm as a whole, but isn't more tough to chew.
In the jungle, people want to eat meat before the flys get to it. Unless there is a cold-store locker, hanging meat isn't an option. Stitchawl |

In its zeal to make more room for turkeys, our supermarket has put all the more exotic poultry on sale. I took it as an opportunity to educate the Spawn's palette beyond McNuggets. Tonight was za'atar roasted quail, quinoa and wilted spinach with mushrooms. A successful dinner by all accounts, dispite Thing One's doing a scientific puppet show with the carcass.
I've got a duck and some cornish hens as well... |
