The only problem is that according to that recipe you need to use Lyle's Golden Syrup. They don't sell that. There is one store locally to me that sells it but it's sold out and they don't expect the next shipment from the US until mid-November, which is too late for me.

Does anybody know if I can substitute Lyle's Golden Syrup for Maple Syrup (which is easier to get)?

The full ingredients list:
350 grams flour
125 grams butter, at room temperature
175 grams caster sugar
1 teaspoon baking soda
4 tablespoons Lyle's Golden Syrup
1 egg
3 teaspoons gingerbread spices
I ran into that problem a few years ago trying to make something really specific - shoofly pie maybe? There are lots of opinions about subs, but I don't think maple syrup is a good one because of its distinctive taste. Some people use corn syrup. For something like gingerbread cookies, though, there are lots of good recipes out there that wouldn't require hard-to-find ingredients. I'd probably just use another recipe. Have fun! I love to bake.

We have syrups but our "standard" syrup (used on pancakes) isn't the same as corn syrup I think.

I just saw on an online forum that there is a supermarket that often sells it in their XL stores, but not on their online store. When the weather is nice I'll go by the one in my town. It seems some green supermarkets also carry it, so I can check those, too. Otherwise I'll order it online.

On another note:
Amazon has updated the Kindle app, at least the one for Android, it now supports Dutch. Hopefully this is another sign that Amazon will soon open their Dutch store.

This is the problem with international cookery .

Molasses (North America) = black treacle (British). Pale treacle = Golden syrup. Both are the results of refining cane or beet sugar, with golden syrup coming from the first refining, and molasses coming from the second. Blackstrap molasses comes from the third refining and has very little sugar content left. We don't produce much golden syrup in North America,(or at least in Canada), though I've heard of a product called cane syrup and wondered about that.

North America produces a lot of corn syrup, which is produced in a similar way to molasses with the added step of converting corn starch to glucose. There are 3 grades of corn syrup: light, golden and dark.

All these syrups are about the consistancy of honey, but have different flavours. For the most part, I've found you can use honey or another syrup in the place of most of them when baking though the taste will change. If you are making candy, you cannot substitute because they are different sugars and will react differently. Treacle tart, pecan pie, butter tarts and sugar pie also will not work with substitutions as they are pretty much like making candy, but you should have no problems with cakes, breads or cookies.

Pancake and maple syrup are alot thinner and pour faster.

We have a great little store that sells all kinds of British and American products. I just had the bad luck that the owner had put in her US order and still had enough golden syrup to last a month, normally. The day after her order had send someone came in and bought all the golden syrup she had. She won't be putting in her next order until early November. It might or might not order in time for me.

I've only ever used molasses in ginger bread. I've never possessed a jar of corn syrup

But do beware of blackstrap molasses. It's rather bitter. My late dad had a story about having the very last batch of pancakes saved for him ..... and he pour syrup liberally all over them .... only to find out it wasn't normal molasses but blackstrap molasses. Yuk!

However, I have a shoofly pie recipe that DOES want blackstrap molasses.

The dark syrup we have for on our pancakes is dark, but very sweet. But I'd like to stay as close as possible to the recipe of the store, since other recipes I've tried from their website were really good.

My heater is finally hooked up and working!
After nearly a year and a half a friend came by on Tuesday to hook up the new line and install a new gas tap in my room. Then we ordered a longer gas hose to connect it to the heater and just now my father connected it.

I'm so happy!
It isn't that cold but I'll keep it on the pilot light.

Packing our bag for a motorcycle tour of the mountain jungles along the Thai/Lao border. This will be the same general area we visited last time, but this time exploring it for a few days on a motorcycle rather than by car. And this time we'll be taking video of it all, using a helmet-mounted camera. Yesterday was my first time experimenting with it, and I really, REALLY don't know what I am doing. I'm bringing the instruction manual, and hopefully that will be enough to get us going. If we get lost along the way, we'll be able to have some movies of it.

If you get lost along the way, you'll be able to review the footage. You may still be lost, but you'll conclusively know that you've passed the same tree three times already...

Just got my [bird] flu shot ... had dropped into the local drug store to pick up a prescription - and said why not? Easier than trying to get into my doctor's office on a work day.

[prepare for future sniveling posts - it hurt!]

We'll get you a wambulance! In basic training our drill sergeant took us into the parking lot of the dispensary, had us drop and start doing pushups until HE was tired! All of us would have gladly killed him at the time. Over the next few days we discovered his subtle brilliance. We were the only platoon that could actually completely use our arms (yes, arms, we got so many shots that they had medics standing on each side of us with an air gun that administered the shots. If you stayed still you were fine, if you flinched the nature of the gun would rip 2-4 inch jagged lines on your arm, you'd have to go to the back of the line and have everything readministered by standard hypodermic needles, and that was anywhere between 7 and 15 shots) wa wa wa! Lol!
