LotR was and will remain one of the books that started the genre in the modern sense. It's not the only one mind you, just the most famous one.
In the 80s you had all these Tolkien copy cats, or followers, however you want to call them. But things have evolved drastically in this genre and Tolkien tradition is just in line with one branch of fantasy.
If you want to know more about it I suggest you watch this Brandon Sanderson's lecture. It's a simple, comprehensive lecture for people who don't know much about genre:

Just watched the video, it's informative, it's Brandon Sanderson himself dispensing the knowledge. I think you've nodded me in the right direction, and I need that. I need to be guided to the right books that will unlock the mental barriers against the most popular genre at the time.

I think it helps to know more about what to expect in a genre so you don't get bogged down by misconceptions.

I have finally got back on track with my main challenge to read 52 books this year :-). But, I've shelved the sub challenge (to read all selections of both book clubs) as I found that it was hampering me. I was getting bogged down in books that I didn't always enjoy and therefore was reading less and less. Since deciding to just read what I want to read my enjoyment and speed has returned to pre bookclub days!

Maybe one day I'll go back to the bookclubs, they did open my eyes to genres that I'd never read before and I enjoyed the discussions.

I think I'm getting back on track this months with my reading challenges. July and August were unusually busy months at work, and I only read four books over those two months (which is pretty shocking for me). But I am spending more time reading already, in September, and if I keep it up, I should still make my goal.

To tell the truth, I hated reading LOTR. In my opinion, the pacing's far too slow and there's way too much description. I greatly prefer the movies, which go a long way toward fixing both of those issues.

You might try digging up a copy of Robert Asprin's Another Fine Myth, the first of his long-running "Myth-adventures" comedic fantasy series. (It's been a while since I checked, but I think the most recent printing was a two-fer with the sequel, Myth Conceptions.) It's short, in the 160-180 page range, but it's on my shelf of books that I can reread at the drop of a hat.

Oddly enough, the debut novel I'm working on (as the techie formatting guy) is a contemporary "new adult" fantasy romance, with the fantasy element being the key MacGuffin. If the author sticks to the outline I've seen, it looks like it'll end up around 130,000 words - around 450 pages - and there's talk of going back through to flesh out some character development a bit more. It may well hit the 500-page mark if that happens.

Often they are just romance novels in a fantasy setting. See Lois McMaster Bujold's The Sharing Knife tetrology for a fantasy romance that is properly both fantasy and romance.

There's a whole branch that broke of Urban fantasy, and is now better known as Paranormal Romance.
I personally dont read those, as I couldnt care less about romance, but those books are quite popular especially among women.

To be honest, most of this book doesn't count as fantasy, except in the sense that all romance books count as fantasy. It's kind of like Freaky Friday; while there's a fantasy plot device that gets things rolling, it's a modern-day story and setting in all other ways.

I think of the Outlanders as Science Fiction since it deals with matters that can happen "The world blew out on January 2001", sounds pretty realistic to anyone that lived through at least a part of the Cold War.

Outlander is a romance book. It just uses time travelling (which is more of a science-fiction trope than it is a fantasy one) to establish the setting of the book. But all in all, it's a romance novel set in 18th century Scotland. The main plot revolves around the personal relationships and sex.
