Not even plain text works everywhere. There can be character encoding issues.

plain text doesn't always work. You lose formatting such as bold, italics, and the like. Sometimes this can be important.

Many documents originate in plain text. Plain text is perfectly suitable for archiving those documents.

You are missing the point, which is that that presupposes that any particular piece of text has any formatting to preserve. For instance, this paragraph is effectively plain text already, and loses nothing from conversion to txt. I COULD enhance its meaning with smilies, but in its current state it works everywhere.

But if I use italics to mean something, that meaning gets lost when converted to plain text. I have read many books where italics means something and removing the italics loses the meaning.

You might ask any friends with different devices to check with theirs. There are incompatibilities between different editions of iBooks and different editions of Kindles too.

I think the issue people are trying to get you to understand is that IF you are selling this book, you are going to get annoyed customers if the approach you use that HAPPENS to work on your device, using your preferred settings, does NOT work on theirs, or, works but then fails as soon as they change font sizes or font in use.
