Sourdough toast does sound good too. OK, I talked myself into making some.

A couple of slices of toasted "English Muffin Bread", with a bit of cheese. This is a new bread that my DW made, and it's remarkably good, and quite like English Muffins. And dead easy to make.

Several glasses of a not despicable New Zealand Pinot Grigio.

Dead simple:

ENGLISH MUFFIN BREAD 
3 cups whole milk
5 cups bread flour
4 1/2 tsp yeast
1 T sugar
2 tsp salt
1 tsp baking soda

Pre-Heat oven to 375F. 
Combine dry ingredients, and whisk together thoroughly. 

Heat milk in microwave to 120F. 
Stir milk into dry ingredients, and let rise for thirty minutes. 

Dust 2 loaf pans with cornmeal, and pour equal amounts of 
batter into each loaf pan. 

Let dough/batter rise for thirty minutes in the loaf pan. 

Bake in 375F oven 30 minutes, rotating pans half way through.
Bake to an internal temp of 200F. 

Let cool on rack. Slice and toast to serve.

This won't replace our usual rustic Italian whole wheat bread, but is a definite winner for something that is quick and easy when we don't have time to make that loaf. (It involves an overnight rise to develop flavour, and then three full rises before turning out and forming into a loaf. Delicious, but a lot more work and time.)

Not really relevant to anything, but why does that recipe specify 4 1/2 tsp of yeast? Wouldn't that be 2 tsp? Oh, eta, that's probably four and a half teaspoons, not four half teaspoons, isn't it?

Anyway, tea in my cup (Typhoo, milk no sugar).

It's four and 1/2 teaspoons. A Tablespoon and a half! A huge amount of yeast, PLUS baking soda. But this is a loaf in a hurry! And the result is a loaf that has a quite open texture, not a lot of gluten development and that tastes much better toasted than plain. IOW, a lot like an English Muffin.

Good morning, everyone! I guess winter is over. I'm back in shorts and a T-shirt again... Oh well, it was fun while it lasted. I've got a nice cup of Taylors of Harrogate's "Yorkshire" tea to drink as I plan my day. Gotta pick up the electric fencing vest I'm having name-stenciled, (It's required for International competition.) resupply the pop-corn container, the travel over to the next village to give a Photoshop tutorial to a friend, followed by a couple of hours of music together. Just another day in Paradise!

I thought I was the only one to do that. Can't tell you how many cups I've had to add to the ice tea container because I forgot I was even brewing the stuff!
