A long long time ago, I read in Nat Geo that armadilloes have this weird fright reflex that makes then jump when startled, so they now jump into the path of the oncoming car. Supposedly that's why there's so many carcasses on the roads.

Well, they also don't exactly move really fast. I get them in the front yard all the time. They generally come out at night to dig for grubs ... which means they are usually crossing the road at night too ... so drivers don't see them very well. It's a bad combination.

They're kind of cute actually. I just have to remind the dogs NOT to bother them. They have yet to learn that "mommy" likes the squirrels, deer, bunnies, and armadillos. So, chasing and hurting them is a "no-no."

So if one were to wish to cook an armadillo, would you leave the shell on or remove it before serving?

OK .... tonight is party night (every Tuesday at the boathouse). So ... I'm going to paint a few more things and then toddle over there for a free meal and some good wine.

My mama was from Nashville Tennessee, and she KNEW how to cook southern. Course, I was to smart to ever try and learn from her........so now I make cornbread with Jiffy Mix. (Here come the pans flying from various kitchens)

When I did my survival training in the Air Force, we gutted them, rolled them up and dropped them on the coals of a fire.

Good eatin' if you've been without food, or MRE's, for four days. Tastes like opossum.
