I prefer the Japanese Greens, Bancha and Sencha primarily, to the Chinese Greens. But that is a purely subjective thing. As CRussel said, the Japanese steep for about a minute in 170-175. The tea leaves are steamed to stop the oxidation process.
Chinese Greens tend to steep at 195 for a minute or so. The leaves are pan dried over a fire. The steaming vs pan drying leads to a different flavor. The Japanese greens are a bit more subtle. |

The differing temps needed for teas are why I switched from the massive water dispenser to the cuisinart tea kettle. The six different temperature settings work great for those of us who drink many teas requiring different temperatures. I kept a Brittany filter with water by the kettle so I could decrease kitchen runs. It worked great. Until the electricity usage twits told me I had to take it home.

Oolongs were my favorite tea before pregnancy. They are called a blue tea and are processed more than a green tea but less than a black tea. It is amazing how one leaf can produce so many varieties of flavors even before infusion based on the location and processing. OJ and Skim Milk for breakfast. |

Sigh. Another wet day it seems. I am tired of this and ready for summer!
(And I agree, ProfCrash, Oolongs are my favourite teas, as a class. I love a good Keemun, and certainly Lapsang Souchong has a place for me. But as a group, Oolongs are still probably my favourites. Today and tomorrow are it for my current big push -- I need to be all in by EOD tomorrow. So don't expect to see me here much, though I'll be drinking a LOT of tea to keep me going. Starting out this morning with Peet's Scottish Breakfast. The hit of Lapsang Souchong in it is perfect for a rainy, foggy morning. |
