I prefer the Japanese Greens, Bancha and Sencha primarily, to the Chinese Greens. But that is a purely subjective thing. As CRussel said, the Japanese steep for about a minute in 170-175. The tea leaves are steamed to stop the oxidation process.

Chinese Greens tend to steep at 195 for a minute or so. The leaves are pan dried over a fire. The steaming vs pan drying leads to a different flavor. The Japanese greens are a bit more subtle.

Most kids do like being tossed in the air -- the problem with the little ones is that sometimes they expel a stream of unwanted material on your clothing/you as they are being thrown and caught. You quickly learn not to do any tossing too soon after they have eaten.

Have fun learning all the new mommy stuff.

The differing temps needed for teas are why I switched from the massive water dispenser to the cuisinart tea kettle. The six different temperature settings work great for those of us who drink many teas requiring different temperatures. I kept a Brittany filter with water by the kettle so I could decrease kitchen runs. It worked great. Until the electricity usage twits told me I had to take it home.

Good morning, everyone! A bright and beautiful Wednesday, and it's starting off with a mug of Taylor's of Harrogate's "English Breakfast" tea, a bowl of rice and some kimchee. Strong stuff for a morning meal!

Calling the embassy today to see about any new visa rules. The Thai government changes its rules more often than I change my socks!

I think China Greens are more common in "generic" green tea, since Japanese green is much more noticeable if it's bad, and also more sensitive to bad temperatures.

Personally, I'm more of a China Green drinker, or Oolong which is somewhere in between Green and Black. Of generally available China Greens, Lung Ching (or Dragonwell) is a good general choice. Quality varies substantially, unfortunately, but even the lower grades make a decent cup of tea if treated right.

One nice thing about moving to Thailand... I won't have even wear socks any more! When I'm there I live in Tevas!

(BTW... the Embassy had no idea of the new immigration rules... They have to check with Bangkok for me...)

Hehehe

Oolongs were my favorite tea before pregnancy. They are called a blue tea and are processed more than a green tea but less than a black tea.

It is amazing how one leaf can produce so many varieties of flavors even before infusion based on the location and processing.

OJ and Skim Milk for breakfast.

Sigh. Another wet day it seems. I am tired of this and ready for summer!
(And I agree, ProfCrash, Oolongs are my favourite teas, as a class. I love a good Keemun, and certainly Lapsang Souchong has a place for me. But as a group, Oolongs are still probably my favourites.

Today and tomorrow are it for my current big push -- I need to be all in by EOD tomorrow. So don't expect to see me here much, though I'll be drinking a LOT of tea to keep me going.

Starting out this morning with Peet's Scottish Breakfast. The hit of Lapsang Souchong in it is perfect for a rainy, foggy morning.
