Personally, I don't believe in 'coincidences...' Thoughts are energy, mental energy spreads out regardless of distances (yeah, this actually has been proven in the labs,) and I really believe that we have just 'lost the ability' to use this fact, and only get it in dribs and drabs these days. I recently bought some jerky in a South African market stall in Reading. Only they call it "Biltong" (South Africans, that is). My current fave is Ostrich biltong, which is quite crumbly, but delicious. Ever tried Ostrich steak? Very lean and tasty. I used to live on the stuff (biltong), but it is harder to get hold of in the UK than in SA, and even though my Mum sends some over from time to time (when it doesn't get confiscated by Customs), it's never enough.

I used to eat it so much, my sister once bought me a Biltong Maker. It's gone the way of all flesh now, sadly.

Black coffee (and no biltong/jerky) in my cup...

These days I heat my house with a DeLongi heater and keep a humidifier going all winter. No more hot and bone dry living rooms. I buy my jerky at Costco.

Time for a glass of tequila. We had a Mexican feast tonight!

I am not a big jerky fan. No idea why because I live salty foods but I have never been able to get into jerky.

I don't add any gluten myself. I just make sure I use flour that's from grain that is naturally high in gluten.

We can't easily get a very high gluten flour here. The standard Rogers bread flour is an acceptable level for ordinary bread, but not a high enough protein level for things like bagels. So we buy wheat gluten from King Arthur and add it to breads that really need the extra protein content.

I use the King Arthur's flours but add gluten because the recipies in the book call for gluten. I think that there is a difference in making bread in a bread machine and not in a bread machine.

There are some specialty flours that I am having trouble finding even at Whole Foods. I think I am going to have to order online. Not a big deal. I am enjoying the various bread experiments.

Stitchwal: What are your favorite recipies from the bread book? I know we really like the Stonehenge and some of the sweet breads. I found the whole wheat bread far to dense. I might try making the whole wheat bread with white whole wheat instead of the regular whole wheat and see how it turns out.
