Good morning, all! I had a dream about Iridal last night... I hope she's found her soul mate!
Did you really? How nice

Hi guys! I know I've been absent the last couple of months, but these days I can only find the time to read through this thread very quickly after work before going over to my BF's place. It's going really well, he's been approved by family, friends and the cats. There's even some talk about moving in together in the not so distant future. Maybe I'll find some more time then to start posting again. So until then: all the best to all of you, have a great year!

Hugs,
Iridal

Very good. And a somewhat more western breakfast.
Quote:
It did take me a year or two to break the daily western habit of baoon and eggs with a side of toast, or pancakes or some sort of boxed cereal. The fact was, I really never new about all the different things people around the world ate for breakfast! Beans on toast? Rice gruel with dried fish? Even the Dutch practice of putting chocolate bits or dried fruit and nuts of oatmeal was almost unknown. The idea of soup, rice, and salted daikon, eggplant, or cabbage almost made me gag the first time I saw it. I have a friend in the US who is so conditioned that he can't eat 'traditional' westerner lunches unless he's first had a traditional western breakfast. If he's missed breakfast for some reason, he'll have toast, scrambled eggs and bacon for his lunch! Me? I'm just has happy with a cheeseburger, muesli, jook, hummus, tabooli, or bread dipped in olive oil to start the day. For me, time is just a way of keeping things from all happening at once.
Having worked graveyard shift for much of my early adult life, I early learned to have whatever meal I was having regardless of time of day or sequence of my sleep/wake cycle. Though I confess these days my daily breakfast is really quite routine. It's almost always a couple of eggs from our hens, a couple of rashers of bacon I've cured and smoked, toast from bread Sharon has baked, and fresh squeezed OJ. Though honestly, I'd be happy to have that for lunch or dinner just as much!

Quote:
Hmmmm.... an interesting problem.... I guess the methods I use for loosening my garden soil probably won't work here; perlite or peat moss...

How about removing it from the machine, letting it rise longer than usual, and baking int the oven?

I'm going to have a second mug of Keemun tea and think about this.

Stitchawl
raising the white flour ratio will help, while still allowing the the flavour of the whole wheat to come through. Also increasing the liquid a bit will also help. The real problem is that you have a dough that is heavier than the yeast can "lift".

What about using White Whole Wheat? I like that it has a lot of whole wheat, I prefer whole wheat to regular bread flour but I would like something less dense. I don't really get the difference between white whole wheat and regular whole wheat.

Sprite with my burger at lunch and Rooibos Ginger now.

Finished morning OJ, and Peet's Major Dickason's

After a week of wet and grey, it's GORGEOUS here. Bright sun, a couple of small whispy clouds, and crystal clear. Cold (0c), but I'll take it. Celebrating with a pot of Lion Mountain Keemun.

I think you cannot bake bread with real whole wheat flour, it needs to be mixed with normal flour (at least that's what my machine guide used to say.....)

The baby is doing well. I heard the heart beat again today and it is strong and healthy. All the first trimester screenings came back normal. THe likelihood of having a child with chromosonal problems went from 1 - 76 to 1 -1,500 based on the initial numbers. I'll have the second trimester blood screening in a few weeks and if that comes back normal the ratio will be even better.

I am looking forward to the next ultra sound. The first one was so cool but the baby looked, well, like an alien. Hopefully we will be able to tell the baby's gender at the 18 week mark.

Discovered a wonderful new dark stout!

http://www.oldehickorybrewery.com/stick_stout.html

I am a long time fan of Old Peculiar, but can't find it anywhere in the US anymore.

Hickory Stick is a very dark, very flavorful stout!

You, who are on the road must have a code that you can live by.
And so become yourself because the past is just a good bye.
Teach your children well, their father's hell did slowly go by,
And feed them on your dreams, the one they picked, the one you're known by.
Don't you ever ask them why, if they told you you would cry,
So just look at them and sigh and know they love you.

Good morning all! Happy Wednesday! A double load of unbranded Keemun tea today... Trying to fight my way awake but it's not working so well... Gonna give it a boost with a big load of REALLY spicy kimchee with my rice today. THAT can wake up Ichabod!

Reading up though several different culinary science textbooks, it appears that modern enriched flour has 'almost' the same nutrients as whole wheat flour , but the whole wheat has more fiber. How about adding something like a spoonful of bran to your mix? Or Psyllium husk? No flavor change but the fiber content is even higher than when using whole wheat. I'll guess that adding a spoonful of wheat germ too would bounce the nutrition out of the park without affecting the flavor, but that's just a guess. But either/both would allow you to use more gluten-rich white flour and give you a better rise... maybe.

Right now, I need more Kimchee and Keemun!
