Do you remember we discussed antioxidants and why some people say we should drink green tea but don't mention other types of food that have a lot more of the antioxidants than green tea?

I might have found some explanation for it.
It is the type of the antioxidant that is found in green tea.
In this short article Health Benefits of Green Tea they mention a particular antioxidant Epigallocatechin Gallate (EGCG / Epigallocatechin-3-Gallate)
(there is another article about Epigallocatechin-3-gallate but I think it is far too scientific for me to understand)

Could it be the answer on our question of why Green tea and not spinach and why it has no particular/special effect on the Japanese problem with stomach cancer?

And now... this is me, signing off for the next few days...

Time for me to go to work again, this time in Malaysia and Thailand. No diving this trip though. Temples, culture, hilltribes, and jungles are what the clients are requesting, so I don't have to pack such a heavy kit for this trip.

See you all next week! Play nice while I'm gone. Actually, I'll probably be able to log on every once in a while as there are soooo many internet cafes in the areas we'll be near. That's the advantage of visiting places where people can't afford their own computers!

1st steep- 5s
2nd steep- 10s
3rd steep- 20s
4th steep- 30s
Rest 5 mins
5th steep- 50s



The only thing I would say about the way of your brewing is to use 100℃ water instead of 90℃, as Cooked Puer Tea is post fermented tea and it requires very hot water in order to push the flavour out. The number of infusions are also depend on the ratio between tea quantity and the amount of water, more teas less water will have more infusions, vice versa.
Nothing really complicated. It is fairly straight forward process, isn't it?

Brewing method mentioned above is for Pu-Erh cakes.
Loose leaf cooked Pu-Erh is simple, like any black tea
