Between 4-10 minutes. I prefer about 4-5, but I often lose track of the time. But after 10 minutes it begins to taste too bitter, so if I really screw up the time, I'll dump it and start fresh.

I never steep more than 3 minutes. In fact, all black teas I steep 3 minutes top.

I use shorter times and more leaves, almost never over 2 minutes. I make the compromise between aroma quality and its fullness.

I always liked smoked sturgeon and potato pancakes but not really a fan of caviar.
