7lb chicken thighs
Coke to just less than cover Lay chicken in single layer in baking tins. Pour on Coke. Bake for 1.5 to 2 hours. Serve with baked stuffing balls...receive gasps of appreciation and "who'd a thought it!" |

1. Rinse thighs thoroughly and dry.
2. Put pants back on (I hope you didn't do step one in front of guests) and drive to the market. 3. Buy lots of fresh veggies. 4. Take those home and clean them up and chop into large bite size pieces and spread out on a baking sheet. 5. Drizzle with olive oil (No, not you. The veggies!) and sprinkle with salt and pepper. 6. Toss (the veggies!) into the oven under the broiler for about 8 to 12 minutes. 7. Eat. 8. Yes, eight. See, we already ate in the previous step. Are ewe still with me?? 9. Throw the thighs into the freezer until next week when someone else has cooking duty. (No, not those thighs! The chicken thighs. Geez!) 6. |

I've only used plain Coke - the catsup seems a bit over the top to me!

Making country bbq pork ribs, hash browns, and blackeyed peas.
My mom always did ribs in the crockpot, but the crockpot is in use for the peas, so I'm going to try the slow oven method at Simply Recipes: http://simplyrecipes.com/recipes/slo..._country_ribs/ I goofed and got the wrong tomatoes for the blackeyed peas, so not sure how this batch will turn out. Normally I used diced canned and add a can of beef broth along with my onion, garlic, and salt pork. This time I got crushed tomatoes and was out of beef broth, so it's just the peas, tomatoes, garlic, onion, salt pork and enough water to cover. |

Well... ok then...
Anyway.. tried the coke thing.. as I said, I did two pans. One with the coke and one with the cream of mushroom/milk then added stuffing. Frankly, the coke one didn't really add anything to it. It just tasted like chicken. BOb |
