I made the sauerkraut last month, the apples, pork, and beer are from the market. All I need to do is put the sauerkraut, cut up pork, apples and apple juice, salt, pepper, and a handful of caraway seeds into the pot, and let it cook for an hour or so, while I read a good book. Now... that IS decadent!

Big decision to make; add or not add some onion to the pot.. Hmmm......

I went with the onion. It worked. I also added a pint of apple juice, besides the two apples that I cut up into the mix.

Dinner was good. I didn't have any German mustard so I mixed some French Pommery with Gulden's Deli style. It worked well too. We were pleased. I would have preferred Kumbacher's Schweitzerhofbrow (sp?) for the beer, but they don't export it any more. Oh well.

Off topic, but I didn't find the thread where you all talked about bread anymore.
I have a bread baker, a machine, that works quite well for me. I get my flour from the mill nearby. Just put everything in and swoosh.........it will be done.

I used to have a bread maker but found myself only using it to mix the dough. I didn't like the way it baked. It was convenient, but I couldn't make a decent French bread in it. It was great for white bread or raisin bread, but that seemed to be about it. Perhaps a different model might have been able to do more.

Yes, I make Italian bread, with a bit of oliveoil and dried tomatoes in the dough. But I also use the machine just for making the dough and then I bake it in my oven. I make a braid of it or tiny breads in tins.

I've got a loaf of bread in my bread machine even as we speak. (a mix -- )

I'm not particular, as we all know here, so it works for me. And it makes the house smell good, too (Italian herb this morning, to have with some cheese at lunchtime.)

I did like the convenience of the bread maker. To be able to have fresh, hot bread just out of the maker for breakfast was a treat. But it never had a good crust, and for French breads or Peasant breads (Farmer's bread) the crumb was never correct. Everything had the texture of white bread unless I baked it in the oven and just used the machine for making the dough (which works great!)

When I took this loaf out today, I immediately rubbed it all over with a pat of butter (a tip I found online somewhere). The crust was perfect -- crispy but tender, if that makes any sense. It was really good with the aztec cheddar...

Oooo the one food gadget I miss from home is my breadmaker.......need to check out Fortress and Broadway for prices - the bread here tends to be a bit too sweet for me.

the main saving grace of my bread maker is that I can get the bread to raise properly.

Yeah... That too! I guess it sets the heat and humidity to make the yeasties really happy. I used to use mine most often for making pizza dough, and as I like to make a double layer deep dish pizza, it really needs to have a crust that can rise correctly.
