"The Book of Tea" recommends black teas be made with freshly boiling water, and green and oolong teas made with water that has boiled then cooled to between 80-90 degrees.
I discovered that boiling water in a microwave and making tea with it results in a tea with very poor flavor for me. Something about the excessive agitation releasing too much oxygen from the water, perhaps. We also use a four-liter electric dispenser, which will boil the water in about 15 minutes, then allow several different temperature settings. No milk or sugar for me, though as a child I used to put three-four packets of sugar into the tiny tea cups we'd get in Chinese restaurants. I guess it was sort of like a 'tea-flavored Kool-Aid!' We lived in Thailand for eight years and had 'Coconut Just About Everything.'
Coconut fish, coconut chicken, coconut pork, coconut puddings, coconut cakes and cookies, coconut milk and cream, coconut dried, shredded, and fresh. Even coconut incense. (Doesn't taste very good...) But in all that time I can't remember EVER having coconut tea! It must be a Celestial Seasonings blend, right? ![]() Is it good? Stitchawl |

Most cups of tea I've had with boiling water from a microwave have tasted "soft" - like hard water has been aggressively treated to soften it. Utterly, utterly vile tasting. Overheating the water (with a wooden spoon in it if you're worried about superheating it - if you're using clean, smooth sided glass jugs or similar it can happen) helps a little.

Water in the MW. I use a clean smooth sided glass jug (1/2 liter) and I watch it from the window while I train my patience. I stop it the moment I see a bubble. I know that it is keeping most of the gases inside because when I put in the thermometer, tiny bubbles form, as in a pot over the gas. As I will get an electric heater soon, I will compare. With MW it is slower because MW can pump about 1kW while electric heaters arrive to 2.5. That is why I decided to have one more item to clutter my kitchen. To day I will also have the task to find a place for the new tea packages that for the moment are resting in the original plastic bag, hanging from a kitchen chair. The packages that have been opened are sporting a clothespin. I was thinking of a shoe box that would keep all the packages neatly arranged. Of those, thanks to Wife, there is no shortage. To do that I have to empty a corner cupboard and rearrange everything in it. With the pilotBob's diet I have changed my eating habits and ingredients, obviously (the pastas and the rices have reduced to almost nothing as I do not eat starch anymore, just a couple of packages for the girls). I imagine that, when things start to go steady, there will be a metal box or two for the teas that I will use more commonly (a black and a green I imagine), plus a number of little packages holding curiosities or special treats. But there is time for that.
G&G (girls and guys). Learning to drink tea in your company has been very pleasant. I still have a number of things to go through, and hopefully a whole wide world to explore (the masala chai that AM has mentioned twice recently, for instance). I will do it draping over me that British aplomb that does not belong to me but that seems to be a useful scene costume while enjoying the brew. Noblesse oblige. I am taking the liberty of karming you for your competence and kindness. Have a good Sunday, all of you. |

Try and buy at least one large container that is air tight. Store your teas in their original bags in that. The air tight container will help the tea stay fresh longer. I have a tin for each of my teas because I am dork but one large air tight container that you can put the bags into will work just as well.

An acquired taste, to be sure. Tea seems to be more popular in Europe, coffee in the States.
I am an avid fan of buying green coffee and roasting it at home. Commercial bulk coffee is totally different from fresh roast. I will not drink stale, pre-ground coffee any longer -- guess that makes me a coffee-snob? There are many reasons for my fanaticism, not the least of which are the huge number of available coffees from virtually every coffee-producing country, the fact that green coffee keeps for a year or more when properly stored (as opposed to the very rapid deterioration of roasted coffee); the fact that my supplier buys directly from the farmers and pays them a fair price without the middle man (not something the mega-corporations do); and because I roast only what I will use in a few days' time rather than keeping stale, ground coffee on the shelf well past it's prime.
