i share your frustration about meat being "slipped in" unexpectedly. for instance, there are some prepared meals in my supermarket which i would love to buy for my lunch on days when i am working in a client's office. one of them is risotto with cepe mushrooms : apparently vegetarian. but if you read the ingredients, it is made with veal broth.

another one is japanese vegetable dumplings. only vegetables inside, so you think they are ok. but no : they are made with chicken broth. arg ! it drives me crazy. why do they do that ???

the other thing which drives me crazy is when at a restaurant you ask if something is vegetarian and they say "oh, you're vegetarian ! but you eat chicken, right ? no ? really ? what about fish ? surely you eat fish ?" how is that vegetarian if you eat chicken ???

Ha ha yeah. My brothers wife is also a vegetarian according to them because she only eats fish and poultry. Hey, before I met my vegetarian wife I almost only ate fish and poultry. Poultry is a large part of the meat intake in my whereabouts.

More seriously: Usually I had at least a frozen ready-made soup or two to choose from at the supermarket which were made on vegetable stock. Today everything is made on chicken stock or veil stock. Regardless whether it's tomato soup, asparges soup or ordinary soup. Apparantly it's what people want.

hope it's better in other countries.

Can anyone tell me btw, the historical background for the reason why such a high proportion of brits are vegetarians?

luckily, there are still some soups here which have only vegetable broth in them. in fact i think there are more and more compared to a couple years ago. but for the rest of the products it's still in a pathetic state (the damned risotto is just one example of many. once i discovered gelatine in *yoghurt* for god's sake !)

i would like to know as well ; i remember when i travelled there i was really impressed to see so many different products labelled "suitable for vegetarians" in just an ordinary grocery store (i mean, not a bio food store). and that was already the case more than 10 years ago, when i was there. france is quite behind the times when it comes to that, in comparison.

Broth was the word for it... can you even say "stock"?

Fond is the danish word for it... think it origins from France.

i think stock is the same as broth, but i'm not sure.

yes, "fond" is the french word for it ("fond de veau" is veal broth), or you can call it "bouillon". i just had to look up what is the difference because i didn't know : they are both broth or stock but a fond is made with bones, a bouillon is not.

If you don't like the texture of for an example carrots. Try frying them (after cutting them into small pieces) at quite low heat for 12-15 minutes. It makes them all yummi and sugary.

Especially if you fry them in bacon drippings. I think everyone could become a vegetarian, if they fried the vegetables in bacon drippings.

I balance the eating of veggies and meat every week. I also do exercise and cardio to make me feel healthy.

No need for a hard hat, I think. It's true that vegetarians need to think a bit more about what they eat, so they get their intake of protein.

When that is said I think it is fair to say that the average vegetarian is probably eating healthier than the average meat-eater. Partly because he/she has to think about stuff like protein-sources and thus is conscious about what she eat, partly because we meat eaters in general eat far to few vegetables and far to much meat.
