is it possible to make into ePub file a .mobi book you purchased from Amazon?
Is it possible to extract the file and convert it to .ePub?

Yes, you can read all reflowable books you buy off Amazon in epub format. You need to use My Devices & Content: Download to PC for transfer via USB. (Linux, Mac, Windows). Mobi, azw and azw3 all can work.
You need Calibre, a Plugin and your Kindle. Never unregister the Kindle. Keep it even if the battery dies. You need its serial number for the Plugin and you need it Registered to do the Downloads. KFX or PC or other Kindle app is harder. Copying files from the Kindle mostly won't work for conversion. |

Yes, at least that's very simple for properly bought books. A current Kindle App is no use at all except to read the Kindle ebook. There are complicated ways of using an outdated Kindle app, which might be also awkward to install.

I mean not reading the book on the device but would an Onyx work to extract the ePub file unto the computer? Or do you need a Kindle device and no other device would work for this?

Basically, you need a Kindle device. As the previous poster said, an old version of Android app which would enable to extract the file, is not guaranteed to work on an Onyx.
