Converting from EPUB to MOBI, fonts?
When I convert an EPUB book to MOBI, I also strip the fonts in the styling tab because I want to always use Bookerly.

I was thinking if this is necessary, how does the Kindle behave with conversions? Does it always use in-built fonts or do the EPUB fonts actually make any difference?

Mobi doesn't support embedded fonts at all, so if you convert to plain old mobi, there's no need to strip fonts.

If you convert to azw3 or dual mobi, then it's another matter.

I convert from epub to azw3 all the time. It's been pretty rare where I needed to strip the font. Usually the publisher wasn't adhering to guidelines and there are other formatting problems.

But why not strip out embedded fonts that aren't going to be used? Embedded fonts can more than double the size of the book file.
