They don't need pressure. They are touch screens, not jab/stab/poke/push screens.

The Forma specs says IPX8, i.e., < 2m for < 1h, but, really, don't. |

Then, yeah, what @Deskisamess said. Unless it's a Forma, the TFT backplane is a thin glass layer that's very much not flexible

I seem to remember my very first cell phone had a pressure-touch system, but those didn't last long at all. They were replaced by infrared and capacitive touch screens.
Eink screens are made entirely differently than phone screens if you're thinking that since your phone can withstand pressure, so should your ereader. Phone screens can take quite a bit of abuse, as can tablets. But as already said, eink screens are more fragile and will break if flexed even slightly from uneven pressure anywhere on the screen or any twisting motion. |

I've fixed the title and tidied the thread.
E-Ink screens with glass substrates are much like any other glass, except that the substrate is very thin. Any point impact is likely to shatter the glass, and any twisting motion likewise. Having said that, most recent ereaders have learned from previous designs, and are now quite robust, provided you don't do something like dropping a pointed object onto the screen, or sitting on them.
