how can I retain a cover of my own for an EPub when merging it with other EPubs?

Hello. Let's say I change a cover in an EPub's metadata (no matter whether I download it or use a picture I already have). If I then use EPubMerge to combine that EPub with one or several other EPubs, its cover "reverts" to the original one, meaning the one I inserted trough the metadata tool is gone entirely. And apparently this is also true if I try to upload this single EPub (not merged with others) on a website. Is there any way to fix this, that is to really replace, on a "deeper" level, the original cover with the one I chose ? Thanks a lot in advance.

On GUI before Merge on wanted cover:
Mouse over a cover: Right click. You can copy or save to disk

After, either Mouse over a cover, Right click, Paste (if you used copy), OR in Edit Metadata: Change Cover, Browse.

Thanks. The second part is what I do for any specific EPub BEFORE merging and it works fine as long as I retain the EPub for just my personal use on PC or e-reader. It's AFTER the merge (or after uploading the single EPub on some website) that the "new" covers are gone. By which I don't mean the cover I put on the complete merged e-book, but the contents, within it, of the merged e-books whose covers I changed beforehand.
I'm sorry, all I know about GUI is that it means "graphical user interface" because Google just told me, apparently it seems to be approximately the same method, but again what I have difficulties with is the Epubs "inside" the merged file, not the "final" file's cover.

Use the polish function to embed the cover, before you merge the books.

Preferences -> Toolbars & Menus -> The main toolbar -> select Polish Books from the left and click on the blue arrow pointing to the right.

I've tried to reproduce the issue through the steps the OP mentioned, but actually the new custom cover for one of the EPUBs has been retained in the merged "Anthology", in both cases -- whether doing the cover embedding through the Polish tool or not...

Only difference is that, after embedding/updating the new cover using Polish tool, the original cover is replaced in the archive.
Anyway, that's good to know
