Bingo! It's Lacewood a tree in the Eucalyptus family, also named Australian Oak.

Not all Purpleheart does that, it happens more with veneer because it's boiled in the proccess of cutting. Some retain a bluish chocolate hue.
The worst offender, the one that broke my hopes was Padauk. It turned from a bright orange to a dark chocolate brown. What a deception!
