I don't see a way to edit what metadata gets used.

One thing you can try is Modify ePub. It has an option to add a Jacket. You can even add the Jacket as the end if you want.

Here is what the Jacket made by Modify ePub looks like. It contains Title, Author, date, publisher, comments/description, and tags.
