There was no authorized line for GD so I set it up again as you suggested, did all the authorization process again, got a message on Kobo that everything went well etc... then the device rebooted itself and couldn't connect to GD anymore. And again, there's still no authorized line for GD in the kobo ereader conf. file.
I follow all the instructions step by step, I'm sure I'm not missing anything but apparently there's something in my device that doesn't allow it to support GD.
Edit: I don't know if this matters but another thing that I've noticed in the conifg file is that these lines
googledrive_link_account_start=https://authorize.kobo.com/{region}/{language}/linkcloudstorage/provider/google_drive AND kobo_googledrive_link_account_enabled=True
other than combing back to the way they were written before (aka without the part I had to add) they also aren't one under the other despite me having copy pasted them exactly as suggested.
