@BetterRed is correct. Other than restoring a backup there is no way to undo "Copy all author sort values to author" in Manage Authors once the OK button has been pressed. The Cancel button would have thrown away the changes.

However, there is hope. The Quality Check plugin can bulk "fix" authors, in your case (I think) by converting "LN, FN" to "FN LN". You would first use Quality Check / Check metadata / Authors with commas. Then select all books found (which might be all the books) and run Quality Check / Fix / Swap author FN [...]. NB: this can take a while because it must rename all the author folders.
