Did you save the book and close the editor before turning the computer off - MacOS will delete files if they are left open for an extended period, which incudes the time the Mac is powered down.

Restore the one with the most recent remove date.

That there are 33 instances of what appears to be the same book in the Trash Can suggests 'something' has been 'deleting' them every time you edited the epub.
