From experience, when you first install 1.17 and sign in, the stupid thing will auto update in the background. So once you are signed in, make sure to uncheck 'auto-update'.

When you restart if it has auto-updated, don't uninstall. You should be able to just reinstall 1.17 and not need to sign in again.
For Windows, run the BAT file attached to the first post to prevent the auto-update.
