Two ideas more :
  1. Once the mayonnaise begins to "appear" (solidify???), you can add as much oil as you need; you can produce litterally liters of mayonnaise at one time
  2. you want to experiment with ingredients : sunflower or olive oil; add some fine herbs; try with curry...
When I was young :scrounge-scrounge: we did it by hand, just "beating" it with a fork (you make a circular gesture that constantly hits the bowl, that's why it's called "battre la mayonnaise") -- doing it all your life will give you a nice tennis elbow too
No, no, that is how you MAKE mayonnaise, not how you DO mayonnaise...
